Panettone French Toast with Grilled Peaches and Caramel Sauce


Panettone French Toast

10 pcs whole eggs 500 ml whole milk 500 ml heavy cream ½ cup white sugar 2 pcs vanilla pods, seeds scraped 2 pcs orange, zest 1 pack panettone, store-bought

Grilled Peaches

80 g unsalted butter, melted 80 g brown sugar ½ tsp ground cinnamon 8 pcs peaches, halved Caramel Sauce 125 g brown sugar 125 g unsalted butter 250 ml heavy cream


As needed unsalted butter


Panettone French Toast

  1. In a bowl, whisk together the whole eggs, whole milk, heavy cream, white sugar, vanilla seeds, and orange zest until well combined.
  2. Slice the panettone into thirds and then cut each third vertically in half. Have the long end of the panettone facing you, and cut into 1.5 – 2 cm slices.
  3. Place the panettone slices into a greased and lined rectangular baking dish. Pour over half of the egg mixture, then push down the panettone so it soaks up the mixture. Pour over the rest of the mixture and once again make sure the panettone is fully submerged.
  4. Place the baking dish inside your Miele Combi Steam Oven on shelf position 2. Select Combination Mode: Fan Plus at 160°C + 1 hour + 50% moisture.
  5. Once cooked, remove from your Combi Steam Oven and allow to cool before placing in the refrigerator to allow the pudding to fully set for a minimum of 4 hours, or ideally overnight.

Grilled Peaches

  1. In a small bowl, combine the melted butter, brown sugar and ground cinnamon.
  2. Brush the brown sugar mix over the cut side of the peach.
  3. Place the peaches, sugar side up, on a baking tray lined with the roasting and grilling insert.
  4. Preheat your Miele Combi Steam Oven on Convection Broil at 200°C.
  5. Place the tray of peaches in the Combi Steam Oven on shelf position 5 and broil for 10 – 12 minutes, or until caramelize on top.

Caramel Sauce

  1. In a saucepan, combine the brown sugar and unsalted butter and place on your Miele Induction Cooktop on medium high heat, Induction Setting 7. Whisk until the mixture is bubbling and the sugar has dissolved.
  2. Whisk in the heavy cream and remove the pan from the heat.


  1. Remove the chilled panettone pudding from the baking dish, cut in half lengthwise, and then slice into thick slices, approximately 3 cm wide. Remove any uneven edges to form neat rectangular slices.
  2. Using your Miele Tepan Yaki on medium heat, spread some unsalted butter all over.
  3. Once the butter has melted and the Tepan Yaki is hot enough, add a few pieces of the panettone on the Tepan Yaki and cook for 3 – 4 minutes on each side, or until nicely golden.
  4. Place two pieces of panettone french toast on a plate with half a grilled peach and a drizzle of caramel sauce, and serve.


Panettone is an Italian sweet bread loaf originally from Milan, usually prepared and enjoyed for Christmas and New Year. Any leftover slices of panettone french toast can be frozen prior to cooking. For a salted caramel sauce, simply whisk in 2 teaspoons of salt after you have added the heavy cream.
